I double #3. I guarantee if I can talk with a candidate for an hour over coffee, I can tell if they have a clue. Same if you talk with me. Assuming of course the interviewer is of similar experience. Not asking trick questions, just digging into the actual experience of doing work they claim to have done. Working on something for months should allow the candidate to talk for hours if necessary. Or not if it's a lie.
